Rosettes Recipe #1

Ingredients

  • Approx. 20 pastries
  • 1 large egg yolk
  • 2 tablespoons sugar
  • 1 cup half and half
  • 1 cup all purpose flour
  • Deep frying: vegetable oil
  • Garnish: sugar

Instructions

Combine all ingredients and beat until smooth. Pour into a bowl that is wider than the rosette iron. Heat the oil to 360 degrees. Use a thermometer or do the "bread test"*. Heat the rosette iron in the oil at the same time. Remove the iron and let excess oil drip off. Dip in the batter. Hold over the deep fryer to set the batter a little. Deep-fry until golden, around 1 minute. Loosen from the iron with a fork. Drain on paper towels. Reheat the iron before frying the next rosette. Dip the rosettes in sugar.

* Place a cube of white bread in the hot oil. If it turns golden brown after around one minute, the temperature is correct.

Ingredients

  • 1 c. butter
  • 1 1/2 c. sugar
  • 2 eggs
  • 1 1/2 c. half & half
  • 3 c. flour
  • 1 tsp. vanilla extract
  • 1 tsp. lemon extract

Instructions

Mix together. Using a krumkake iron drop a rounded teaspoon on the hot iron. Bake until brown. Roll immediately on a wooden cone to shape.

Norwegian Krumkake

 

Krumkake Recipe

Ingredients

  • 1 c sugar
  • ¾ c all purpose flour
  • ½ c butter, melted
  • 1/3 c whipping cream
  • 2 tsp cornstarch
  • 1 tsp vanilla
  • 4 eggs

Instructions

Beat all ingredients until smooth. Drop by 1/2 Tbsp onto iron. Makes about 6 dozen cookies.

Aebelskiver Recipe

  • 1 cup milk
  • 1/2 cup melted butter
  • 3 eggs, separated
  • 2 tbsp sugar
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • powdered sugar

Heat the milk to lukewarm. Whisk in the butter, egg yolks, and sugar. Turn into a bowl and add the flour and baking powder, whisking until well blended and no lumps remain. Whip the egg whites until stiff and fold into the mixture.

Heat aebelskiver pan over medium high heat until a drop of water sizzles when dripped into pan. Put about 1/2 teaspoon butter into each indentation. Spread it around. Spoon in one tablespoon of batter and let it cook about 30 seconds. When to bottoms are browned, turn the cakes over and cook on that side until browned. Remove from pan and place on serving plate. Dust with powdered sugar.

Tip: Use a wooden skewer to turn aebelskiver

Krumkake Recipe (pronounced KROOM-ka-ka)

Ingredients

  • ½ c butter
  • 4 eggs
  • 1 c sugar
  • ½ tsp ground cardamom
  • ½ tsp vanilla
  • 1 ½ c flour
  • 2 Tbsp cornstarch
  • Sweetened whipped cream (optional)

Instructions

Melt butter and cool slightly. In medium mixing bowl, beat eggs with an electric mixer on medium speed for 1 minute. Add sugar; beat about 3 minutes or till sugar is almost dissolved. (Do not overbeat.) Stir the cooled butter, cardamom and vanilla into egg mixture. In a small mixing bowl, combine flour and cornstarch. Add flour mixture to egg mixture. Stir just till smooth. Drop by spoonful onto heated krumkake iron. If you like, pipe the cookie cones full of sweetened whipped cream and serve immediately. Makes about 36 cookies.
