Birgits Almond Shells

Ingredients

  • 3/4 cup stick margarine or butter, softened
  • 2/3 cup sugar
  • 1 cup ground almonds
  • 1/4 teaspoon almond extract
  • 1 egg
  • 1 2/3 cups all-purpose flour

Instructions

Beat the butter and sugar until light and fluffy. Add the remaining ingredients, reserving a little of the flour. Knead the dough lightly, adding the remaining flour. Cover with plastic and refrigerate for at least an hour. Form the dough into a narrow log. Cut into pieces and press into greased individual baking tins. Place the tins on a baking sheet. Bake on the center oven rack for around 8 minutes. Tap out of the tins immediately.

Approx. 50 cookies

Oven temp. 400 degrees

Nut Cake Recipe

Ingredients

  • 1/2 cup margarine or butter, softened 2/3 cup sugar
  • 2 eggs
  • 3/4 cup ground nuts
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon baking powder

Instructions

Grease and flour a 1 liter (4 cup) loaf pan or 8 inch round cake pan. Beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each. Combine the nuts, flour and baking powder and carefully fold into the egg mixture. Pour into the prepared pan. Bake on a low oven rack for around 30 minutes at 350 degrees.
