Scandinavian Sour Cream Waffles (Vafflor)

Ingredients

  • 5 eggs
  • 1/2 c sugar
  • 1 c flour
  • 1 tsp cardamom
  • 1 c sour cream
  • 4 Tbsp melted butter

Instructions

Beat eggs and sugar for 7 minutes with mixer in large bowl. In separate bowl, blend flour and cardamom together. To egg mixture, fold in half the flour mix. Then fold in sour cream, then remaining flour and finally the melted butter. Let batter rest for 10 minutes. Cook in Scandinavian Heart Waffle iron. Serve waffles topped with whipped cream and dollop of ligonberries, Drizzle with maple syrup or dust with powdered sugar for extra sweetness.

Almond Cake Recipe

Ingredients

  • 1 1/4 c sugar
  • 1 egg
  • 1 1/2 tsp almond extract
  • 2/3 c milk
  • 1 1/4 c flour
  • 1/2 tsp baking powder
  • 1 stick melted butter

Instructions

Beat together sugar, egg, extract and milk. Stir in flour and baking powder. Then add butter. Mix well. Spray cake pan with cooking spray. Sprinkle slivered almonds into bottom of pan if desired. Pour into a greased pan. Bake at 350 degrees for 40 to 50 minutes or till edges are golden brown. Cool cake in pan completely before removing. To remove place inverted Almond Cake Plate to top of cake pan and then flip. Dust with confectionary sugar if desired. Due to the ridges in cake pan, slicing is a 'piece of cake'.

Ingredients

  • Makes around 10 Norwegian waffles.
  • 3.5 oz butter
  • 4 eggs
  • 4-5 tablespoons sugar
  • 1/4 teaspoon cardamom
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 2 cups milk

Instructions

Melt the butter. Combine in a bowl with the remaining ingredients and beat until smooth. Let the batter rest for around 15 minutes. It should be the texture of a thick sauce. If too stiff, add a little cold water. Bake on a greased hot waffle iron. Freshly baked, lukewarm waffles are delicious with sour cream and jam, and cold waffles are good with butter and brown goat cheese.

Ingredients

  • 3 eggs
  • 2/3 cup sugar (1 cup is app. 2,5 dl)
  • 7 oz melted butter
  • 2/3 cup cream
  • 1 cup potatoflour or cornflour
  • 1 cup white flour
  • ½ teaspoon cardamom

Instructions

Whip egg and sugar. Stir in the melted butter. Whip the cream and stir it carefully into the mixture. Use spoon to drop the mixture in the hot “gorojern”, one spoon in each “room”.

Ingredients

  • 1/2 cup whipping cream
  • 1 egg
  • 1 teaspoon vanilla
  • 2/3 cup sugar
  • 1 lb flour
  • 1 teaspoon cardamom
  • 11 oz butter

Instructions

Whip the cream. Beat the egg and sugar until thick and lemon-colored. Stir in the cream and vanilla. Set aside a small amount of the flour for rolling out, and combine the dry ingredients. Cut in the butter and stir in the egg mixture, mixing until smooth. Cover and refrigerate for at least 2 hours. Roll out a small amount of the dough at a time and cut pieces with a pastry wheel to fit a goro iron. Bake until crisp and golden. Cool on a rack and store airtight or freeze.

Glögg is the traditional winter drink during the six weeks leading up to December 25–a cold, dark time of year in Scandinavia. Glogg resembles a variety of historical mulled wines, like wassail.

Ingredients

  • 2 cups water or orange juice
  • 1 (3-inch) piece orange rind
  • 1 (1-inch) piece fresh ginger, peeled and sliced
  • 2 cinnamon sticks
  • 6 whole cloves
  • 5 whole allspice
  • 2 cardamom pods, bruised
  • 1 vanilla bean, split lengthwise
  • 1 (750-ml) bottle red wine, such as Burgundy
  • 1/2 cup sugar

Instructions

Combine first 9 ingredients in a pot over medium heat. Bring mixture to a simmer, being careful not to boil. Reduce heat to low; cover and simmer for 15 minutes. Remove from heat, and stir in sugar. Stir until sugar dissolves. Strain mixture, and serve immediately, or gently reheat before serving. (If you prefer a stronger flavor, steep spices longer before straining.)
