Scandinavian Sour Cream Waffles (Vafflor)
from the Lefse Time kitchen

  • 5 eggs
  • 1/2 c sugar
  • 1 c flour
  • 1 tsp cardamom
  • 1 c sour cream
  • 4 Tbsp melted butter

Beat eggs and sugar for 7 minutes with mixer in large bowl. In separate bowl, blend flour and cardamom together. To egg mixture, fold in half the flour mix. Then fold in sour cream, then remaining flour and finally the melted butter. Let batter rest for 10 minutes. Cook in Scandinavian Heart Waffle iron. Serve waffles topped with whipped cream and dollop of ligonberries, Drizzle with maple syrup or dust with powdered sugar for extra sweetness.

Waffle Recipe
from Norwegian Cooking for Everyone

Makes around 10

  • 3.5 oz butter
  • 4 eggs
  • 4-5 tablespoons sugar
  • 1/4 teaspoon cardamom
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 2 cups milk

Melt the butter. Combine in a bowl with the remaining ingredients and beat until smooth. Let the batter rest for around 15 minutes. It should be the texture of a thick sauce. If too stiff, add a little cold water. Bake on a greased hot waffle iron. Freshly baked, lukewarm waffles are delicious with sour cream and jam, and cold waffles are goo with butter and brown goat cheese.
